Jerome has been selected as a guest panelist at Fine Food Queensland, he will be discussing the emerging food trends of 2014 as well as the steady increase in dietary or special request menu requirements. When planning an event an essential question to ask is: Do you have any special diets or allergies? The days where a vegetarian was a special request, now the ‘standard’ requests are seafood and nut allergies, gluten free, lactose free, halal, and vegan. Jerome and Justin Zammit (Epicure, Brisbane Town Hall) will talk about the challenges that kitchens and caterers face when designing menus.
